Homemade fresh salsa

Ingredients

Tomatoes 6 large or 8 medium (the riper the better)

 Green Pepper ½ large size/ ¾ smaller 

Onion, yellow ½ large/ ¾ smaller Cilantro several sprigs. fresh or dried JalapeƱo ½  finely chopped (depends on how “hot” you like) 

Garlic 2 cloves, finely chopped 

Salt 1 tablespoon 

Sugar 2 tablespoons 

White pepper ½ teaspoon

 Lemon juice fresh ½ to ¾ cup (may use part lime juice) 

Tabasco ½ to ¾ teaspoon

Section the tomatoes, onion, and pepper, place in blender. Add cilantro, salt, sugar, pepper, garlic, jalepeno, and Tobasco. Add lemon juice.

Turn on the blender in short bursts. For chunky, less blending. Pour the salsa into a large bowl. Season to taste by adding more lemon juice, salt , sugar, or tobasco. This salsa seasons/ improves with time. It will keep for at least one week in the refrigerator.
