Jill Spencer’s Green Beans
1/3 c. onion, chopped
2 Tbsp. flour
¼ tsp. pepper
2 cans French cut green beans
3 strips bacon (fried, crisp, crumbled)
2 tbsp. butter
1 tsp. salt
1 c. sour cream
1/3 c. shredded Swiss cheese
Simmer chopped onion in butter until lightly browned or limp. Add slowly and stir in the flour followed by salt and pepper. Add sour cream; heat, but do not bring to a boil. Add green beans. Pour all ingredients into casserole dish. Top w/ shredded cheese & bacon. Bake at 350 for 15 minutes.
For best results, make early in the day or even the day before for consuming later– lets the flavors melt together. Just reheat.
Also, we usually TRIPLE if not quadruple the recipe - it will fill a "good size" casserole dish (probably 11x14-ish). The regular recipe would probably serve 2-4 people at the most. This is also great as a leftover so make a big batch to start off with and enjoy for a while!
