Chicken Salad

I have been looking for a great chicken salad recipe for a while and this hit the nail on the head. Not too much "sauce" and lots of flavor.

From the Sister's Cafe

3 c. diced chicken (Hello! Rotisserie!)
1 8 oz. can pineapple tidbits (I left this out so definitely optional.)
1 c. celery, diced
1/2 c. chopped/sliced almonds
1 c. seedless grapes

Dressing:
1 Tbsp. olive oil
1 Tbsp. vinegar
1/2 c. Mayo
1 tsp. salt

Mix dressing ingredients well and pour over salad ingredients. Toss to coat. Refrigerate until serving.
