This recipe is from a friend of mine. Just a warning: you're probably going to want to double this because they are so tasty.
3 c. flour
1 c. butter - softened
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1 1/4 c. sugar
1/2 tsp. vanilla
Sugar & cinnamon for rolling dough
In a large bowl, beat sugar and butter. Add eggs then cream of tartar, baking soda, salt & vanilla. Add flour and mix well. Cover with plastic wrap and refrigerate for 1/2 hour. Preheat oven to 375. In a small bowl mix cinnamon & sugar - about 2 tsp. cinnamon with 2-3 Tbsp. sugar. Shape dough into balls and roll in cinnamon sugar. Place 2-in. apart on cookie sheet. Bake 8-10 minutes until very light tan. Let them sit on sheet for 2-3 minutes before moving to cooling rack.
