1 1/2 c. warm water
1 1/2 Tbsp. yeast (2 packets - 1 1/2 Tbsp. = 1 Tbsp 1 1/2 tsp.)
2 tsp. sugar
Combine the yeast and sugar with the water and set aside for about 5 minutes until foamy on the top.
In a large mixing bowl, add 3 1/4 c. flour and 2 tsp. salt to a mixing bowl. Slowly add the yeast mixture and knead for 5 minutes. If the dough is too sticky, add no more than another 1/4 c. flour. After kneading, divide dough in half. Form into a baguette. (Kind of pull it into a rectangle and then pinch the ends over.) Place on baking sheet, cover and let rise for 30 minutes. I coat plastic wrap with cooking spray for this. If you are going for the "authentic baguette" look, slice each loaf down the middle with a very sharp, non-serrated knife. Preheat oven to 450 and bake for 15 minutes or until top is golden brown. Half way through, brush with about 2 Tbsp. melted butter.
