Baked Potato Soup



From my sister-in-law.
Good stuff.

4-5 large potatoes
2/3 c. butter
2/3 c. flour
7 c. milk
4 green onions, sliced
6-12 slices bacon, cooked and crumbled (I highly recommend 12.)
1 1/4 c. shredded cheddar cheese (I would recommend sharp.)
1 c. sour cream
3/4 tsp. salt (or more to taste)
1/2 tsp. pepper

Bake, cool, peel and cube:
4-5 large potatoes

In a large kettle, melt 2/3 c. butter. Stir in 2/3 c. flour to make roux. Gradually add milk. Heat and stir until thickened. Add potatoes, green onions and bacon. Reduce heat and simmer 5-10 minutes. Add cheddar cheese, sour cream, salt & pepper until melted. Serves 8-10 if you decide to share.
