Waffles

These are very basic, but delicious waffles. From the Joy of Cooking.
Don't overwork the batter. It's supposed to be fairly lumpy and
the waffles come out smooth.




In a large bowl mix:
1 3/4 c. flour
1 tbsp. baking powder
1 tbsp. sugar
1/2 tsp. salt

In another bowl mix:
3 large eggs
1/2 - 2 sticks unsalted butter, melted
(ok, that is a HUGE range there... I use 1 stick and it seems just right)
1 1/2 c. milk

Mix the wet ingredients into the dry and stir until well combined.
Pour onto the waffle iron and away you go.
Freeze leftovers and heat in the microwave for soft waffles and the toaster for crisp.
