Lasagna Soup


This is a recipe from Paula Deen.
Ya'll know I love Pinterest but sometimes the links don't work so well. But I found this and it was fabulous. It makes a lot.

1 lb. ground beef
1 onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 tsp. thyme
1 TBSP firmly packed brown sugar
32 oz. chicken broth
14.5 oz. diced tomatoes
15 oz. can tomato sauce
2 tsp. Italian seasoning
1/2 tsp. salt
2 c. broken lasagna noodles
5 oz. grated Parmesan cheese (to taste)
2 c. shredded mozzarella cheese (to taste)

In a large pot, combine beef, onion, bell pepper and garlic. Cook over med-high heat for 8-10 minutes, stirring occasionally. Beef should be brown and crumbled. Drain well. Stir in thyme, brown sugar, broth, diced tomatoes, tomato sauce, Italian seasoning and salt. Bring to a boil over med-high heat; reduce heat and simmer 20 minutes. Add noodles and simmer until noodles are tender. Stir in Parmesan cheese. Preheat broiler. Ladle soup into ovenproof bowls. Evenly sprinkle mozzarella over the top. Broil soups until cheese is browned and bubbly. Serve immediately.

Note: I think I'd add way less mozzarella cheese next time. Or increase the soup - the ratio was off. You could even sprinkle some in at the end - the soup should still be hot enough.
