These little meatloaves are a staple around here. Great to freeze and re-heat. Just a small little size that doesn't invoke the yuck factor associated with some meatloaves. (How's that for a sales pitch?)
1 lb. ground beef
1 large egg, lightly beaten
1/2 c. panko bread crumbs
1 c. shredded white cheddar
coarse salt and ground pepper
2 tbsp honey mustard
2 tsbp ketchup
Preheat oven to 450. In small bowl, mix together mustard and ketchup. Set aside. Combine beef, egg, panko, 1/2 c. cheddar 1/2 tsp. salt and 1/4 tsp. pepper. Form into 2 x 4 inch loaves (more like a rectangular hamburger patty - whatever works for you). Place on baking sheet. Brush with honey mustard mixture and sprinkle with remaining 1/2 c. cheddar. Bake until loaves are cooked through, 15-20 minutes.

mini meatloaves are the best since the corners are always the best anyway.
