These waffles were amazing. I'll be posting about my whole journey with sourdough soon.
Just double the recipe - you can freeze any leftovers.
1 c. all purpose flour
2 Tbsp. granulated sugar
1 1/2 tsp. baking powder
1 tsp. salt
2 eggs
1/2 c. milk
6-8 oz. (the weight, not the volume) sourdough starter
3 Tbsp. melted butter
Mix flour, sugar, baking powder and salt. In a separate bowl, mix eggs and milk and then add sourdough starter. Mix well. All together and mix well. Cook to directions of waffle maker. I got 4 full waffle pan waffles out of a double batch. (Each full waffle pan size makes 4 individual waffles - if that's helpful.)
So so good!
