Crispy Cauliflower Tinga Tacos

 I found a new recipe blog that I adore and it's giving my cooking new life. It's called "Half Baked Harvest." I highly recommend you check it out. Also huge thanks to my girls that are both here (hooray!) and hoping me so much with cooking and baking and keeping me chubby ;) It's glorious. 

I've become quite a fan of roasted cauliflower which is a little shocking but I've found some really good recipes that use it and give it a thumbs up. Try it if you haven't already! 

Ingredients:

2 tbsp. extra virgin olive oil, plus more for rubbing
1 large head cauliflower, cut into small florets (about 6 c. chopped)
1 yellow onion, chopped
2-3 chipotle peppers in adobe, finely chopped (use to your taste - HOT!)
1/2 tsp. dried oregano
1 tsp. kosher salt
1/2 c. red enchilada sauce 
8-12 corn tortillas (I prefer flour), warmed
1/2 c. shredded pepper jack cheese
1/2 c. shredded cheddar cheese
salsa, shredded lettuce, sour cream, pico de gallo - for serving (whatever you love!)

Honey Lime Avocado crema
1 large avocado
1/2 c. fresh cilantro
1-2 tsp. honey 
1 clove garlic, grated
juice from 2 limes
kosher or flaky salt

Preheat the oven to 425.  Heat the oil in a large skillet over high heat. When the oil shimmers, add the cauliflower and onion. Cook, stirring occasionally, until the cauliflower is charring, about 5 minutes. Add the chipotle peppers, enchilada sauce, oregano, salt and 1/3 c. water. Reduce the heat to medium and simmer until the sauce has thickened slightly, about 10 min. Remove from heat. Warm the tortillas for 30 seconds to 1 minute in the microwave (if you put a damp paper towel over them in the microwave, they don't dry out.) On a baking sheet, rub the tortillas with olive oil. Lay each flat and then layer evenly with cheese and cauliflower. Fold the other half of the tortilla over the filling, gently pushing so they stick together. Transfer to the oven and bake 5-8 minutes, then flip and cook another 5 minutes, or until the cheese has melted and the tortillas are crisp.  Meanwhile, make the crema. Combine all ingredients in a blender until smooth and creamy. Season with salt. Serve with your fixings!
