Texas Sheet Cake

 I had a different recipe for Texas sheet cake on here but this one is so much simpler. From the Pioneer Woman. 






Ingredients:
For cake:
2 c flour
2 c sugar
1/4 tsp kosher salt
4 tbsp cocoa powder (heaping!)
2 sticks butter
1 c boiling water
1/2 c buttermilk
2 whole beaten eggs
1 tsp baking soda
1 tsp vanilla

For icing: 
1/2 c finely chopped pecans (optional)
1 3/4 sticks butter
4 tbsp cocoa powder (heaping!)
6 tbsp milk
1 tsp vanilla
about 1 lb powdered sugar (recipe says 1 lb minus 1 cup)

I used a standard cookie sheet pan. Combine flour, sugar and salt in a mixing bowl. Melt butter in a saucepan. Add cocoa. Stir together.  Add boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir slightly to cool. 

Pour the buttermilk in a measuring cup and and add beaten eggs, baking soda, and vanilla. Stir buttermilk mixture and flour/chocolate mixture together - mix well and pour onto sheet pan. Bake for 20 minutes at 350 degrees. 

While cake is baking, make the icing. Chop pecans finely. Melt butter in a saucepan. Add cocoa, stir to combine then turn off the heat. Add the milk, vanilla and powdered sugar. Mix together. Add pecans, stir together and pour over warm cake.  (Add any other toppings that you want. I put some mini chocolate chips on and they melted pretty quickly but still yum.)
