I follow an account on Instagram called "The Car Mom" and she posted this recipe. Tried it and it's a keeper. Hardest part? Chopping the pepper and onion. You can make it in one pot or throw it in the crock pot and let it stew for when you're ready. I'm not a huge fan of chili but this is good stuff.
Ingredients
2 lb ground beef
1 can Rotel
1 can black beans (rinsed, drained)
1 can chili hot beans with liquid
1 jar medium roasted salsa
1 yellow onion chopped small
1 green pepper chopped small
1/2 c sugar
1 package taco seasoning
(optional: 1/3 of 12oz can of jalapeño peppers)
In a large pot, add ground beef, crumble and cook. While cooking, add taco seasoning, onion and pepper.
Once meat is cooked, add in Rotel, salsa and jalapeño peppers (add jalapeño juice for extra spice). Stir and let sit on medium/low heat.
Once getting closer to serving, add in black beans, chili hot beans and sugar. Stir and cover.
Top with cheese and sour cream or whatever you want!
