Ingredients:
2 c. butter lettuce, chopped
2 c. fresh arugula, chopped
1 pint grape tomatoes, quartered
4 slices thick-cut bacon, fried & crumbled
1 c. sweet corn
1 avocado, chopped
4 oz. feta, crumbled
Dressing
1 1/2 tbsp. olive oil
1 lime, juiced
1/4 tsp. salt
1/4 tsp. pepper
Add all ingredients together except for bacon and feta. Add those after you mix the dressing and pour over the salad. (I double the dressing - it's simple but tasty.) Fold it all in. I've also substituted romaine lettuce if I didn't have butter & arugula on hand.
